The Most Creamy Vegan Tomato Soup

Almond-Base | Appetizer | Cashew-Base | Creamer-Base | Dairy-Free | Dinner | Keto | Oat-Powder | Recipe | Soup | Sugar-Free | Vegan | Vegetarian |

Summer is upon us and that means you're probably craving fresh and healthy meals that satisfy. And you don't want to spend a lot of time preparing them. This vegan tomato soup is dairy-free and gluten-free. It's a creamy dish that is an easy prep-ahead meal that makes for a delicious lunch or dinner during the summer...or anytime of year.  It's the ultimate comfort food served hot or cold, year 'round!

About the Ingredients

One of the best things about this tomato soup recipe is that it contains a tasty list of healthy ingredients that pack a lot of flavor into each bowl. You're using tomatoes, which are in season in the summer, even if you "cheat" with the canned version. You're also making good use of fresh onions and garlic, which are also easy to find in the summer.

All kinds of tomatoes are a wonderful source of vitamin C, a nutrient that supports your immune system. They also contain antioxidants, as do the basil, onions, and garlic used in the recipe.

Antioxidants fight free radical damage in your body, which helps reduce the risk of cancer and other health problems.

But the magic happens when you add the JOI milk concentrate. Whether you use JOI made with cashews or almonds, hemp or oat, you get an extra layer of flavor and nutrition. JOI concentrates can be blended into soups to create a creamy, silky texture that is vegan, but that also tastes heavenly. They're a great alternative to milk and are super easy to use as you prepare this tomato soup recipe.

Why Use JOI in Your Vegan Tomato Soup?

There are so many great reasons to use JOI in this delicious tomato soup. The best one is that it adds loads of flavor. That means you're preparing a crowd-pleasing dish that everyone wants more of.  By scooping in a bit of JOI, you can use a healthier alternative to cream, butter or even store-bought almond milk. JOI is made with simple ingredients and doesn't contain dairy nor fillers and preservatives that other processed boxed plant milks often have.

Rather than spending the time to soak cashews and blend them into the soup for creaminess, or risking a “coconut” flavor by using coconut milk or coconut cream for creaminess, instead you can use a scoop of JOI milk concentrate to make it faster and easier, not to mention delicious!

The result is a creamy and tasty soup that is perfect for the summer months. And using JOI makes it so quick and easy to do. Plus, when you control the ingredients that go into your soup recipe, you create something you feel good about serving and eating.

Equipment Needed

Not only is this creamy tomato soup easy and quick to prepare, but you won't need a lot of equipment to get it done.  A large pot makes it a breeze to cook this soup in one handy place that you can also serve it from.

An immersion blender makes it quick and efficient to get the perfect creamy texture you're looking for, without having another clunky blender bowl to clean. You can also use a traditional blender or food processor if you prefer (get someone else to do the extra dishes!).

There you have it. Not much else is needed to prepare this easy soup recipe for you or your friends and family. What could be better on a hot summer night than a meal that comes together this easily?

Recipe Process

You're not going to find many soup recipes that are easier than this one. Start by sauteeing the onion in olive oil for a few minutes, then add the garlic and continue cooking for a minute or two.

This allows both the onion and the garlic to release their delicious flavors before adding the rest of the ingredients. That means they'll infuse the soup and you'll get their wonderful taste with every bite.

Next, you'll pour in the tomatoes and the vegetable broth, while also seasoning with salt and pepper. Bring to a boil and then simmer this mixture to combine the flavors.

Now for the best part. Ad your JOI and the basil leaves and blend the soup until it reaches that deliciously creamy texture you're looking for. That's it! You're ready to serve it.

Variations to the Recipe

This delightful tomato soup is great as the recipe instructs. However, we love experimenting in the kitchen and we hope you do too. That's why we're sharing some yummy ways to switch it up and make this soup your own.

Tomato basil soup is classic, but you can add some zing by tossing in a few roasted red peppers or a few slices of fresh jalapeño for some heat.

Fresh basil is in abundance in the summertime so it's definitely a star in this soup. But it tastes just as wonderful with dried basil if that's what you have on hand.

Experiment with herbs and spices too. Try some crushed red pepper to jazz it up. Or toss in a bit of celery salt for a fresh new flavor.

Try topping the soup with grated vegan cheese, croutons, or additional basil. It also tastes great with some spinach or diced bell peppers as a garnish.

And of course, you'll want to serve your tomato soup with a crispy grilled cheese sandwich on the side. Use vegan cheese slices if you prefer.

What Makes This Recipe So Great?

You've probably picked up on the mouthwatering flavor that this soup provides. But that's not the only thing that makes it so great.  The soup comes together in under 30 minutes, making the obvious solution for a quick summertime lunch or dinner meal, whether you're eating alone or the entire family is gathered around the table.

If you're committed to a vegan lifestyle, it can sometimes be difficult to find tasty recipes that mimic those made with animal products. The addition of JOI to this soup gives it that flavor you're craving.

Not to mention,  you can also serve it cold!  Gazpacho has taken such a hold on our collective food psyche that no one will bat an eyelash if you serve them a tomato basil “gazpacho” - make it ahead, pull it straight out of the fridge and pour into bowls for the ultimate convenient, delicious treat!

Using JOI in Your Kitchen

You'll love this vegan tomato soup, but it's not the only thing that you can cook with JOI.

Other soups that JOI works wonders in are this White Gazpacho and this Roasted Red Pepper Bisque (which also works served cold!).

Try pairing your soup with this delicious Spring Green Salad or this crisp and fresh Broccoli Slaw and some grilled bread for the ultimate satisfying, plant-based meal.
